auntie pam's chicken salad {tute}

today has been full of grocery shopping, big(ger) decisions in the realm of my life &future, and cooking like im a short order chef to get the fridge prepared for us to be healthier.

on the list of to "cooks":

  • tzatziki sauce
  • spaghetti sauce
  • salsa (see tute here)
  • gicellas soup (see tute here)
  • chicken salad (auntie pams recipe)
after grocery shopping i was loaded full of fresh produce &healthy alternative for just about everything. i had to. this being tired all of the time has to stop immediately. i can barely get out of bed in the morning, let alone stay awake all day.

after everything was said and done, i got started on making gicellas soup. the aroma of it perked me up &i was rarin' to go to get everything else prepped. then i realized the time. dinner. guess that sort of put a damper on my plans, oh yah! i also realized that i hadn't eaten all.day. oops! guess in my quest to a 'whole food lifestyle change' i forgot to eat in the midst. fail stacey, fail.


after the soup was all finished, i started baking my chicken breasts & voila! i have some good ol' chicken salad. ready for the tute? here we gooooo.

auntie pam's chicken salad

what you will need: (easy peasy lemon squeezy!)
  1. boneless/skinless chicken breasts
  2. chicken broth
  3. 1/2 sweet onion
  4. 1/2 red pepper
  5. celery salt
  6. salt & pepper
  7. mayonnaise (i use miracle whip) or for the more picky eaters [nikki] you could use tzatziki sauce or ranch dressing.
instructions:

just mix it all together.
no, really! it's that easy i've taken pictures to show you what i did!
