soup devine

ashley over at LBB featured a homemade soup on her blog. seriously, the picture looked delicious, i was craving it just looking at it. so that was it, decision made, i was re-creating the recipe. (i have a little secret, i've never made soup before - don't hate.) i scoped out my cupboards and realized other than a few items, i had eveything to make it. off to the store we went to get everything. i couldn't wait, i was incredibly stoked!

i can't believe how easy this was, and the taste, pretty incredible. i've had at least 1 bowl a day since making it.

 so i made a little tute for you guys, with the few changes that i made.

Gicela's Spicy Chicken Soup
2 chicken breasts (i used 1)
1 onion
2 large tomatoes (i used a can of diced tomatoes)
2 jalapeno peppers
1 handful of small carrots (i used a veggie mixture for stir fry)
1 handful of broccoli (i used a veggie mixture for stir fry)
2 potatoes
1 1/4 cup rice
1 1/4 cup barley (i omitted this as Lulu is allergic)
Chicken flavor bouillon
Garlic salt
Salt and pepper


chop up your boneless/skinless chicken breast

season it with garlic salt

i used extra virgin in olive oil and covered the bottom of the pot; add your chicken

chop up your onions

add to your chicken and oil; medium heat; fill pot almost halfway with water.
bring to boil

i finely chopped my jalapenos, opened a can of diced tomatoes; add to boiling water

add chicken seasoning and more salt; boil 5 minutes
add barley; boil 5 minutes
add white rice; boil 5 minutes(i used basmatti rice)

slice potatoes
add potatoes and veggies to soup; continue boiling

ENJOY!
