"Mommy it smells deeeee-licious"

This morning has been less than stellar, I was faced with a 3 headed dragon full of fiery and a princess who's pipes are definitely working. Our morning has been full of "K don't touch your sister", "Q no more whining", "Q don't bite your brother", "K don't push your sister", "K & Q clean up your mess!". You get the idea, bask over my incredibly fresh and peppy morning with my amazingly well-behaved kids, ha!(cue background audience full of laughter).

One of the ways I help de-stress myself is through the tummies of my hungry monkeys. I was searching through Food.com and came across this recipe for blueberry muffins ( because I had blueberries sitting in the fridge screaming "EAT ME!". I was looking for the recipe to Starbucks (drool.) blueberry muffins with the crumble on the top, if you've never had one you're definitely missing out.

So ensue a little baking therapy this morning, and I am QUITE impressed with myself.


To Die For Blueberry Muffins
Ingredients

* 1 1/2 cups all-purpose flour
* 3/4 cup white sugar
* 1/2 teaspoon salt
* 2 teaspoons baking powder
* 1/3 cup vegetable oil
* 1 egg
* 1/3 cup milk
* 1 cup fresh blueberries
* 1/2 cup white sugar
* 1/3 cup all-purpose flour
* 1/4 cup butter, cubed
* 1 1/2 teaspoons ground cinnamon

Directions

1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
3. To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
4. Bake for 20 to 25 minutes in the preheated oven, or until done.


So while I was baking, I did a how-to, including pictures. Swoon.


First, I get out ALL of my supplies that I need from my recipe list.


So, lets go! Ready to bake? (remember to preheat your oven too 400F)

First, I'd get out two bowls (The yellow & green ones I used) In the larger bowl add together your ingredients. (Watch the picture sequence.)


Grease the pan, I do it old school style a good old napkin & butter.


Add the ingredients to the larger bowl...







After you've filled up your tray (I got 9 muffins) I fill the excess holes with water, halfway, to prevent burning my muffin pan.

Finally, it's time to stick these puppies in the oven.




The recipe couldn't have hit the nail on the head with 20-25 minutes. The entire time whilst in the oven my daughter, Q (You'll find me referring to her as Lulu.. Lol), was sniffing ever so loudly saying "Mommy! They smell deeeeee-licious!!!". Aw, thanks sweetie.

And, alas, they're finished!!! They couldn't smell ANY better.



Aren't they beautiful? Taste like a piece of heaven. The troops were fans, too! K gives 2 thumbs up!

Banned.

I have officially joined the never.owning.another.microwave.again club. This is microwave numero 2 that has died within the last 6 months, really???

My first wave of appliances that I was banned from was toaster ovens, after an uber embarrassing experience of catching my parents kitchen on fire, throwing water ON an electrical fire, and having the alarm system have the fire trucks show up at my house. (Insert mortified look) I was banned from the ever owning a toaster oven club.

Now it's onto the microwave. My first microwave died randomly one day, just stopped heating food. I was less than impressed and I never realized how much I actually USE a microwave (Yes, I am aware of the health concerns that comes with zapping my food). So I scrambled and scrambled to find another on my very tiny budget, and was lucky enough to have a friend give me an old one of theirs. So, i've had this one since November. Yes, thats only FOUR months ago, not long ago at all did I get this puppy in my hands, and now, it has succumbed to the death touch of me. *facepalm*

So it's official. I am banned from the club, the microwave club. I am no longer cool. *sigh*

I am telling you it's an appliance conspiracy and next my fridge will stop working and i'll have to start living off of the land.

Things I love Sunday

The run down of today?

Well it was a lazy morning, hang outs in my bed watching some good ol' beauty and the beast - thank you Walt Disney. Then we had showers, got our bags ready, and it was off to take the kids to their visitation with their Dad, which ensued some quiet, alone, time with my Mom to walk around Walmart. Has anyone been in a Walmart lately? Some awful stellar people that you run into. We actually walked the store of it's entirety and took it all in. I fell in love with a few plants, thanks to funds, I have to wait until the end of the week to go back and grab them. However, I'm alright with that. I want them, now. And spring, ANYONE LISTENING TO ME, bring on SPRING!

I wrote coloUr, yes, here in Canada this is how we spell it. My bestie in SoCal clearly drops the U, why is that?

Super Fantastic #1

Welcome to my glorious fantastic okay maybe I'm going overboard FIRST blog post. i'm figuring this is the best place to jot down my day to day accomplishments, loves, likes, and everything in between instead of doing it in the style of Facebook.

Lately, everything I "document" i do on Facebook, and i've come to the realization, sadly, that I could have followers who read it instead of sharing it through Facebook; It's extremely over-rated, but sucks me in so easily.

So here I am bloggy world! Are you ready for me?

Figured, in the light of my day, I'd post a few things that I love. I was in the hospital today, and a little bit of background information on me, not only am I a stay-at-home-mom, i also suffer from the not-so-pleasant Crohn's Disease, so the Emergency Department and I hung out for the better part of the day dancing with an IV, super fantastic times. WOMP.


Recently, my bestie's son(my beloved nephew M) had his FIFTH birthday, because my bestie and I are from different coasts AND different countries, the best way to share some birthday love with him is via E-Sharing.
After numerous searches through YouTube, baby K and I sent M this: It's a Monkey Happy Birthday.

I've also been 'browsing' the bloggy world lately and some GREAT reads are Mandy @ Harper's Happenings shes a great Momma with the cutest little peanut. Another is Danielle @ Sometimes Sweet, she's has the cutest little baby, some rockin tattoos, and has such a cheeky disposition. Ill share one more Cheri @ I am Momma Hear Me Roar, this beautiful Mom has two stellar boys and has an insane passion for crafting and just being an overall wonderful person. So check them all out and let me know how you enjoy them. I certainly follow them, daily.
