yummmmmy

i decided later last night that i'd get up with lori this morning and together we would make bakerella's mini maple pancake muffins. another super cool friend of mine made them yesterday and she intrigued me with her "oo's and aah's". obviously jenn persuaded me that this was a great idea. so it was. the alarm went off at 6:30am. i thought for sure i would be able to get up, shower, and be ready to meet lori at 650am. ensue extreme laziness. i hit the alarm about 4 times. finally, at 6:45, i rolled out of bed.

got the tassimo running, the laptop opened, and freelance whales pumping on the stereo. enter baking bonanza waaay to early in the morning. i have documented, and given my own tute - aren't you excited??

as i tiptoed around the kitchen, i was extremely glad that i got everything out last night, therefore i didn't bang around in the kitchen TOO much. i wanted the kids to sleep through most of it. i love my kids, however, early morning baking with two children that just woke up isn't my idea of a wildly fantastic time. i got 90% of the way through baking before i heard the pitter patter of tiny feet coming at me looking for back scratches and hugs.

so coffee in hand, laptop ready to go, and lori poppin' up on fb chat - let's bake!


Mini Maple Chocolate Chip Pancake Muffins.

1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons sugar
2/3 cup buttermilk
1 egg
2 tablespoons pure maple syrup
2 tablespoons melted butter
1/2 cup milk chocolate chips


  • Preheat oven to 350 degrees.
  • Combine flour, baking powder, baking soda, salt and sugar in a medium bowl. Sift together with a wire whisk.
  • In another bowl, stir buttermilk, egg, maple syrup and melted butter until just combined.
  • Add wet ingredients to dry ingredients and stir with a spoon until combined.
  • Stir in chocolate chips.
  • Bake for 8-9 minutes.

i gathered most of my ingredients, first.

Add wet ingredients to dry ingredients and stir with a spoon until combined.


Stir in chocolate chips. Reserve a few chips to sprinkle on the tops.


Bake for 8-9 minutes.


 I only got 12. i used a big muffin pan.
(if you use a mini muffin pan, you should get about 24)


i poured maple syrup over top of them.
(you can dip the muffins in syrup if you want, instead, i poured to minimize a sticky mess)


 i made a fruit salad, and this was breakfast - delicious!


mr man k was thoroughly enjoying, many YUMS was made while consuming.


 this was totally worth the extra minutes of sleep that i missed. the nuggets enjoyed every moment of eating these, and now they're still coming in here and grabbing some to munch on, i'm pretty positive that breakfast, this morning, was a success.

(i had a video of the kids eating, however, blogger had other ideas. it won't upload *sigh*)
